- 1 cup of spicy pickles ( I used Wickles Pickles brand) – roughly chopped and drained
- One 24 oz container of sour cream
- One packet of ranch seasoning
- 1 teaspoon onion powder
- One cup of panko bread crumbs
- 2 Tablespoons of unsalted butter
- 2 Tablespoons of fresh dill – chopped and divided
- Salt and Pepper, to taste (optional)
- 1 -2 sprigs of dill for garnishing (optional)
RECIPE STEPS
Step 1: Toast the Panko
The crispy, crunchy coating that’ll take your dip from delightful to downright irresistible is simple to make. Melt some unsalted butter in a skillet over medium heat. Toss in your panko bread crumbs and half of your chopped fresh dill, and let them toast until golden brown. Be sure to stir the panko constantly to prevent burning.
Once toasted, transfer to a plate and allow to cool while you mix the dip together.
Step 2: Mix the Creamy Dip Together
Next, it’s time to tackle those spicy pickles. Make sure your pickles are diced into bite-sized pieces.
In a mixing bowl, combine the sour cream, ranch seasoning, onion powder, and the rest of the chopped dill. Then, fold in the diced pickles.
If desired, season with salt and pepper to taste.
Step 3: Bring it All Together
Once your sour cream mixture is seasoned to perfection, add it to your serving bowl. Now, take those toasted panko bread crumbs you set aside earlier and sprinkle them liberally over the top of your dip. Garnish the top with on or two sprigs of dill.
