In this recipe, I whip the bleu cheese together with creamy ricotta to create a spreadable condiment. Bleu cheese dip is traditionally served with buffalo wings to cool your mouth from the peppery heat of the sauce.

According to most resources, this classic sauce that dresses Buffalo Wings was created by bar owners Teresa and Frank Bellissimo at the Anchor Bar in, yep, you guessed it, Buffalo, New York. There are others who claim to have invented the dish, however.
In the late 1960’s popularity of buffalo wings rose quickly in restaurants and food producers worldwide. In 1977, the mayor of Buffalo, NY, proclaimed July 2, 1977, as “Chicken Wing Day” in honor of the famous dish. Today, buffalo wings remain a popular menu item for sports events, bars, festivals, and parties.
Is it Bleu Cheese or Blue Cheese?
It’s both 💁🏾♀️. Either spelling is correct! ‘Bleu’ is French for ‘blue’; you’ll see this variety of cheese with either spelling.
Blue cheese comes in a variety of textures and varieties around the world. The type I use for this recipe is a crumbled variety found in most American grocery stores, but it still includes the distinct marbled bluish mold (Penicillium) that blue cheese is known for.

For the Whipped Bleu Cheese
- Crumbled Bleu Cheese
- Ricotta Cheese
- Olive Oil
- Salt and Pepper, to taste
For the Buffalo Sauce Toast
- Italian Bread Loaf – 4 or 5 slices
- Unsalted Butter – melted
- Hot Sauce
- Garlic Powder
- Honey
Garnish
- Red Onion – thinly sliced
- Crumbled Bleu Cheese
Recipe Steps
- Prepare Whipped Bleu Cheese Spread
- Mix the ricotta and 1/2 of your blue cheese crumbles (you’ll save the rest for garnish) for about 30 seconds in a food processor or blender. Add olive oil and salt and pepper to taste, and blend for 20-30 seconds until the spread is smooth and creamy.
- Set whipped bleu cheese spread aside while you prepare your toast.
- Make toast
- Whisk together the melted butter, hot sauce, honey, and garlic powder in a small bowl to make a buffalo sauce.
- Coat each piece of bread evenly with buffalo sauce.
- Toast bread under a broiler for 1 to 2 minutes until browned. Remove and let cool slightly.
- Top toast and serve
- Spread a generous amount of whipped bleu cheese onto each toast.
- Garnish with additional bleu cheese crumbles and sliced red onion, and serve.

- 5 oz Crumbled Bleu Cheese divided
- 1 cup Ricotta Cheese
- 1 Tablespoon Olive Oil
- Salt and Pepper to taste
FOR THE BUFFALO SAUCE TOAST
- 4 – 6 slices Italian Bread Slices
- 4 Tablespoons Unsalted Butter melted
- 2 Tablespoons Hot Sauce cayenne pepper based
- 1/2 teaspoon Garlic Powder
- 2 teaspoons Honey
GARNISH
- 1/4 cup Red Onion thinly sliced
- Crumbled Bleu Cheese
