Mix the ricotta and 1/2 of your blue cheese crumbles (you’ll save the rest for garnish) for about 30 seconds in a food processor or blender. Add olive oil and salt and pepper to taste, and blend for 20-30 seconds until the spread is smooth and creamy.
Set whipped bleu cheese spread aside while you prepare your toast.
Make buffalo sauce and toast
Whisk together the melted butter, hot sauce, honey, and garlic powder in a small bowl to make a buffalo sauce.
Coat each piece of bread evenly with buffalo sauce.
Toast bread under a broiler for 1 to 2 minutes until browned. Remove and let cool slightly.
Garnish Toasts and Serve
Spread a generous amount of whipped bleu cheese onto each slice of toasted bread.
Garnish toasts with additional bleu cheese crumbles and sliced red onion, and serve.
