In a large pot, cook orzo according to the package's directions.
When the orzo is al dente, drain and rinse gently with cold water to stop the cooking. Drain well and allow the pasta to cool for at least 10 additional minutes.
Next, in a large bowl, gently stir together the cooled orzo, vinaigrette, crumbled feta, tomatoes, cucumbers, red onion and lemon zest. Season to taste with salt and pepper.
