Oven-Baked Shrimp Dip

Warm, cheesy shrimp dip made with ricotta, Old Bay seasoning and cheddar. This easy baked seafood appetizer is perfect for gatherings and game days.

Ingredients
  

  • 1 lb shrimp peeled and deveined
  • 2 tsp Old Bay seasoning
  • 15 oz ricotta cheese
  • ½ cup mayonnaise
  • 1 jalapeño diced (seeds removed)
  • 1 cup shredded mild cheddar
  • ¼ cup cheddar for topping
  • cup Parmesan cheese
  • 4 heaping tsp pimentos lightly drained
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste
  • Fresh herbs for garnish

Instructions
 

  • Preheat oven to 400°F.
  • Toss shrimp with Old Bay and spread on a parchment-lined baking sheet.
  • Roast for 5–6 minutes until opaque. Cool and chop.
  • In a bowl mix ricotta, mayo, jalapeño, cheddar, Parmesan, pimentos, Worcestershire, salt, and pepper.
  • Fold chopped shrimp into the mixture.
  • Transfer to a baking dish and top with additional cheddar.
  • Bake 15–20 minutes until bubbly.
  • Garnish with herbs and serve warm with chips, bread, or crackers.

Notes

Tips for the Best Shrimp Dip

Use medium or large shrimp.
They’re easier to chop into hearty pieces that hold up well in the dip.
Don’t overcook the shrimp.
Since the shrimp bake twice, roasting them just until opaque keeps them tender.
Drain the pimentos.
Too much liquid can make the dip thinner than desired.
Use a shallow baking dish.
This allows more surface area for that golden, bubbly cheese topping.

Storage & Reheating

Refrigerate:
Store leftover shrimp dip in an airtight container for up to 3 days.
Reheat:
Warm in a 350°F oven for 10–15 minutes until heated through.
Microwave:
Heat in short intervals, stirring occasionally.
