Instructions
Heat olive oil in heavy skillet over medium heat.
Saute' corn onions for 8-10 minutes until softened, stirring every few minutes. Add paprika, and cumin. Add desired amount of salt and pepper. Stir to combine and cook 5 more minutes.
Remove from heat and stir in mayo.
Top with crumbled cotija cheese adn
