Miso Roasted Sweet Potato Fingerlings

Elevate your side dish game with these crispy and golden sweet potatoes. Fingerling sweet potatoes are tossed in a combination of butter, honey, miso and seasonings. Then they are roasted until tender.

Ingredients
  

  • 2 lbs sweet potato fingerlings
  • 2 tsp white miso paste
  • 1/2 tsp ground ginger
  • 1 tbsp honey
  • 6 tbsp unsalted butter
  • 3 tsp garlic confit oil or 2 cloves of minced garlic
  • salt to taste
  • pepper to taste

Instructions
 

  • Preheat oven to 375 degrees Farhenheit
  • In a microwave-proof container, melt your unsalted butter. Next, you'll whisk in your miso paste, honey, garlic oil, and ginger powder.
  • On a sheet pan, toss potatoes with the butter and miso mixture until potatoes are completely coated. Arrange potatoes in a single layer and lightly season with salt and pepper, to taste.
  • Transfer sheet pan to athe oven and roast until fork-tender and golden in color About 15-20 minutes.

Notes

 If your melted butter and miso mixture starts to solidify, pop it back in the microwave for 5 seconds at a time. You want it to melt just enough to coat your potatoes easily, but you don't want it to burn.
